In Barcelona, there is a huge restaurant called Tapa Tapa. It must seat several hundred people and both times I was there it was packed. I looked it up on Trip Advisor and it got some lousy ratings, but when I was there, everything I tried was nothing short of terrific. In any event, I got one of their recipes for a shrimp tapa and thought I would share it with you. It takes just minutes to make, and you will be delighted with the result. This recipe will serve four as a tapa and two as a main course.
1 Lb Medium-large shrimp, shelled and cleaned
1 Tbs EVOO
1 Tbs Finely chopped onion
1 Clove Garlic, chopped fine (or more)
3 Tbs Fino or Amontillado sherry
1 Tbs Tomato sauce (any kind)
1 Tbs Heavy cream
1/2 Tsp Dried thyme
Salt and pepper to taste
Chopped parsley for garnish
In a large skillet, sauté the onion and garlic in EVOO for 2-3 minutes. Add the shrimp and sauté 30 seconds on each side. Add the remaining ingredients (except parsley) and cook until everything is heated through. Serve at once sprinkled with chopped parsley.
Serve this with some great bread for sponging up the sauce.
