Three of my very favorite things to eat are puff pastry, whipped cream and berries, so I decided to make a quick and easy dessert that combined all three. I make pastry shells and fill them with a mixture of berries and whipped cream. To make it more interesting (to adults), I like to macerate the berries in a bit of booze like Grand Marnier. Yum. Instead of whipped cream, you can use crème fraiche or mascarpone cheese. Any of these choices can be sweetened if you like. If you would like a bit of crunch, throw some slivered almonds, chopped unsalted macadamias or even some chocolate bits into the filling. Dress it up with a sprig of mint.
Pepperidge Farm puff pastry shells are found in almost every supermarket in the country. They come 6 to a package. All you need to do is place them on a bakinhg sheet and bake them (from the frozen state) for 18 - 20 minutes in a pre-heated 425° oven. Once cooled they are ready to use.
Instead of whipped cream, you could use crème fraiche or mascarpone cheese, any of which can be sweetened or, better, flavored with the booze.
